Impossible Easy Luncheon for Two

Impossibly Easy Ham & Swiss Pie, Green Salad with Sweet & Sour Dressing & Pumpkin Spice Cookies

Bisquick Impossible Ham & Swiss Pie*

1 & ½ cups cubed fully cooked ham                          STEP #1 Heat the oven to 400°

1 cup shredded Swiss cheese (4 ounces)                    STEP #2 Grease a 9-inch pie pan

¼ cup chopped green onions or regular onions          STEP #3 Sprinkle the ham, cheese and onions in the pan

½ cup Bisquick Mix                                                    STEP #4 Stir together the Bisquick, milk, eggs, salt &

1 cup milk                                                                                   pepper. Use a whisk in a bowl or using a blender

1 /4 teaspoon salt, if desired                                                       makes this task super easy! Pour this over the pie

1/ 8 teaspoon pepper                                                   STEP #5 Bake at 400° for 35-40 minutes or until a knife

2 eggs                                                                                          inserted into the middle comes out clean. Cool

                                                                                5 minutes. Serve.

*Tip … this pie is easy because there is no crust to roll out. The crust forms as the pie bakes.

*Tip … This is a good way to use leftover holiday ham

 

 

 

Green Salad*

Of course, a fresh green salad can be anything you like but they usually

begins with some kind of salad greens. Then add some veggies.

Salad Greens-iceberg lettuce or romaine letter, spring mix, spinach

Carrots Shredded

Cucumber-thin slices

Onion-diced or rings

Tiny Tomatoes

STEP #1 Crisp the salad greens by opening the iceberg lettuce head or cutting off the romaine lettuce stem end. Wash them in cold water, removing any discolored pieces. Wrap them in a clean kitchen towel and refrigerate until serving time. Meanwhile, mix up your home-made dressing … keep reading

STEP #2 Slice the onion, carrots and cucumber. Keep everything cold until serving time.

*A quick way to make a nice salad is to use a salad kit! Very good and very easy.

 

Sweet & Sour Salad Dressing

Use a jar with a good fitting lid. Add all the ingredients and shake well several times before use. Use equal amounts of sugar, oil and vinegar.

1/2 cup vegetable oil + 1/2 cup sugar + 1/2 vinegar (any kind of vinegar will work)

 

 

 

 

Pumpkin Spice Cookies … Easy Peasy

(Makes about 24 cookies)

1 box spice cake mix (15.25 oz.)

1 can pumpkin (15 oz.)

1 cup chocolate chips

1 /2 teaspoon pumpkin pie spice

STEP #1 Heat oven to 350° Locate two cookie sheets

STEP #2 Use parchment paper and a cookie scoop if you have one.

STEP #3 Mix all the ingredients in a bowl and mix until all the dry ingredients are mixed in. Do not over mix.

STEP#4 Scoop rounded tablespoons of dough 2 inches apart onto the parchment paper.

STEP #5 To flatten the cookies, spray the bottom of a glass with cooking spray and use it to press the dough down on the cookie sheet.

STEP#6 Bake for 15-18 minutes in a 350° oven.

STEP #7 When the cookies come out of the oven don’t move them right away. Let them firm up for a few minutes.

Optional: Frost them with cream cheese or vanilla frosting.
