Why do we crisp salad greens? A great salad should be served super cold and super crisp. Washing the greens in cold or ice water helps them stay crunchy, makes them more appealing and helps to remove any remaining dirt. Spin them dry in a salad spinner or dry them with kitchen towels, Hold in the refrigerator until serving time. If you want to get fancy, serve salads on chilled plates.
