The World’s Greatest Mexican Torta

What is torta?

Although “torta” translates to cake, don’t expect dessert when you order a Torta Mexicana. Instead, the Torta is a Mexican street food that can be described as a cross between a sandwich and a taco. The Torta has classic Mexican ingredients, but instead of a tortilla, they’re served in a warm, toasted bun. A Torta Mexicana can be filled with just about anything, but they’re usually made up of meat, cheese, veggies and sauce.

Ingredients:

FOR THE HERB MAYO

  • 1 cup mayonnaise
  • 2 tbsp. freshly chopped parsley
  • 2 tsp. freshly chopped thyme
  • 1 tbsp. extra-virgin olive oil
  • 2 cloves garlic, minced

FOR THE Mexican Torta

  • 1 bolillo rolls
  • 1/2 cup onion
  • 1/4 cup Dijon mustard
  • 12 slices deli ham or turkey ham
  • 8 slices provolone
  • shredded iceberg or romaine lettuce (to taste)
  • 1 tomato, thinly sliced
  • 1/2 red onion, thinly sliced

Directions:

Step 1: In a medium bowl whisk together mayonnaise, parsley, thyme, oil, and garlic.

Step 2: Spread 2 tablespoons herb mayo on 4 slices of bread. Spread 1 tablespoon mustard on the other 1 torta. Top each mayo slice of bread with 3 slices of ham or turkey ham, 2 slices of provolone, lettuce, a couple slices of tomato, and onion,  mustard side down.
