Classic Carbonara with Zucchini uses zucchini spaghetti pasta, eggs, Mozzarella cheese, bacon, black pepper. This recipe departs from tradition and uses zucchini, and parmesan cheese.

A trick to help when cooking carbonara is to ensure all your recipe preparation is completed before hand, and your ingredients are accessible as the cooking process happens very quickly for this dish.

INGREDIENTS:  

  • 5 zucchinis
  • 3 tablespoons extra virgin olive oil
  • ¼ cup yellow onion, diced
  • ½ cup mozzarella cheese, grated
  • ½ cup parmesan cheese
  • black pepper to taste
  • salt(optional)
  • bacon
  • 2 cups pasta alfredo
  • 2 garlic

INSTRUCTIONS:

  • In a large pan over medium-high heat, cook the bacon with the garlic cloves.
  • Bring a large pot of water to a boil, cook zucchinis for 5 minutes.
  • Meanwhile in a skillet, sauté onion over high heat for two minutes. Add zucchini, cook for an additional two minutes, season and set aside.
  • Add the cheese and egg mixture and toss. Serve with grated parmesan on top and salt and pepper to taste.

Everyone To Clean Up:

  • Cleaning up stations. Wipe down all surfaces used tables, countertops, stove, microwave, refrigerator.
  • Clean off all floors (sweep and mop) and vacuum surrounding areas.
  • Unload (if there are any in the dishwasher) load dishwasher and wash containers and pots (hand washing dishes).
  • Trash- take to the dumpster.
  • Laundry (if there are some kitchen towels in the basket) and ect…
