Perfect Fall Breakfast

Pumpkin Spice Pancakes

2 cups Bisquick                  STEP#1

2 Tablespoons sugar                      Mix all this

2 teaspoons baking powder        together in a

1 teaspoon cinnamon                  bowl.

1 teaspoon pumpkin pie spice

 

 

1 large egg                                 STEP#2 Combine all these ingredients in a separate

1/2  cup pumpkin purée                         bowl.

1 teaspoon vanilla               STEP#3  Now combine both bowls mixing well and

1 to 1 1/4 cups milk                                 let rest 10 minutes

STEP#4  Use a 1/4 measure, make pancakes on non-

stick griddle or use a small piece of butter

under each pancake. Serve hot.

Oven Baked Bacon

Make this your go-to method when you need bacon for a big group and don’t want to bother making multiple batches in a frying pan. Plus, there’s no turning and cleanup is simple.

1: Line a rimmed baking sheet with foil or parchment paper and lay out as many bacon strips as will fit snuggly without overlapping.

2: Place in a cold oven. Then heat the oven to 400 degrees F and bake to desired crispness, 25 to 35 minutes.

3: Drain well on a paper-towel-lined platter.

 

Best Breakfast Casserole (Egg & Hash Potato) serves 6

Grease a 9X13 baking pan                   STEP #1 Place

preheat oven to 350°                               potatoes in pan

1 & ½ pounds frozen hash brown*    in a single layer

1 pound pork sausage           STEP #2  Cook and

crumble in a frying pan

about 10 minutes-drain on paper towel.

10 eggs-whisk                                 STEP#3   Whisk together

1cup milk                                         all these ingredients

1 teaspoon onion powder           and pour over the potatoes in the baking pan.

1/4  teaspoon garlic powder

Salt & pepper to taste

 

 

12 ounces shredded Cheddar cheese    STEP#4  Top with ½ the cheese and

Divide 1/2 and 1/2                       the cooked sausage and then the

rest of the cheese. Cover with aluminum foil **Bake 1 hour. Remove foil and return to the oven another 10 minutes until a knife inserted into the center comes out clean.

 

 

**You may want to spray the bottom of the foil before putting on the casserole.

*Try using a product like Ore-Ida Potatoes O’Brien that has onion and bell peppers already chopped up. Saves work. Tastes Good!
