English Muffins and Soup Lunch with a Treat

English Muffin Sandwich

1 English Muffin, split              STEP #1 Split the English Muffins

Butter                                              with a fork. Place in the oven to toast

a little or use a toaster. Butter the muffin if you wish.

Sliced Ham

Sliced Cheese                             STEP #2 Add all or any of these choices

Sliced Tomato                             Pop the muffin back in the oven at 250° to melt the

Cream Cheese                            cheese and warm the meat.

Diced Onion

Scrambled egg                                                    For something really wild

add some pineapple pieces!

Quick Ramen Chicken Noodle Soup………..this soup is so good you might make it every night. There are many variations. Make what you like. This serves 4.

1 Tablespoon oil (or other fat)

1 Tablespoon minced garlic                      STEP#1 Put the oil, garlic,

½ teaspoon grated ginger                           ginger, scallions, and

4 scallions sliced-white & green parts   chili sauce in a soup pot

½ teaspoon chili sauce or sriracha          and cook 3-4 minutes until

fragrant and scallions start to soften.

3 cups chicken stock/broth                      STEP #2  Add these ingredients and bring to a

3 cups beef broth                                                 boil over high heat. Taste and adjust as

1 Tablespoon fish sauce                                    necessary. (It might need some water

1 Tablespoon soy sauce                                     if it tastes too salty)

 

 

 

4 blocks of ramen noodles (3 oz. each)         STEP#3 Break up the ramen noodles inside

Chocolate Chip Cookie Cake

3 packages Martha White Chocolate Chip Muffin Mix

2 eggs

1/2 cup butter, melted (one stick)

Cookie cake pan-use the large cast iron frying pan

Ice cream, extra chocolate chips- optional

Instructions

Preheat oven to 350°F. Spray the cookie cake pan with non-stick cooking spray and set aside.

Combine both Martha White Chocolate Chip Muffin Mixes, eggs, and butter in a mixing bowl until the dough just comes together.

Place cookie dough into the pan and press until evenly spread.

Bake for 12-14 minutes or until light golden brown. Let it cool and top with ice cream if desired.
