Hardy Winter Lunch 

Broccoli Cheese Soup 

This is a hardy cream soup, just great for cold winter days.  

4 cups of milk (DIVIDED) 

2 Tablespoons Cornstarch 

1 ½ cups cut up fresh broccoli 

1 cup shredded carrots (optional)  

1 Tablespoon chicken flavored dry soup base 

2 cups sharp shredded cheese 

Sat and pepper to taste.  

Step #1 Divide the milk. Put three cups into a soup pan and set  

The other cup aside.  

STEP#2 Add the chicken soup base to the pot with the 3 cups of milk and heat over low heat until hot. 

STEP#3 Cup up the broccoli into ‘spoon size’ pieces and place it in a microwave safe bowl. Add the shredded c carrot on top. Add the 1 Tablespoon of water. Cover the bowl and microwave on high for 1 ½ minutes.  Stir and repeat this until the broccoli becomes bright green and just tender. Be careful. Do not overcook the broccoli! Drain the broccoli in a colander in the sink.  

STEP#4 In a small bowl or jar, mix or shake together the remaining one cup of milk and the 2 Tablespoons of cornstarch until smooth. Slowly add this mixture to the hot milk in the pot.  

STEP#5 Simmer gently, stirring constantly, until slightly thickened. Add the cheese and the broccoli mixture.  

Heat through all the way. Do a taste test. Add salt or pepper as desired. Enjoy!! 

Garlic Toast. Garlic toast can be done in many ways. It’s easy to make yourself, no need to buy that expensive frozen stuff.  

Step #1 Butter slices of bread on both sides. Sprinkle very lightly with garlic powder 

Step#2 Put it on a baking sheet and toast in the 350° oven until golden brown.  

Don’t burn it… be careful and watch through the window in the door.  

If you want to step it up a bit, you could sprinkle with any combination of spices or grated cheese. If you cut the slices of bread into 4 strips you can call them

Lazy Day Spice Apple Muffins 

 

This is a quick and easy recipe for a moist and super delish muffin. 

Add a cream cheese frosting if you like 

 

1 box spice cake mix 

2 cups applesauce 

1 large cut up apple (any kind) 

 

Step #1 Preheat the oven to 350° and grease 12 muffin cups 

Step #2 In a large bowl, combine all the ingredients and mix well 

Step #3 Evenly scoop the batter into 12 prepared muffin cups 

Step#4 Bake in the center rack for 18-25 minutes or until a toothpick comes out clean.  

 

 

Add-Ins…You might like to add some extras like pecans, walnut, raisins, craisins or even a ¼ cup of finely shredded carrots or zucchini.
