Pancakes with Topping Bar, Scrambled Eggs, and Orange Julius

Pancakes can be made in many ways but making them from a mix is easy and oh so good. Make them fancy, add your choice of toppings.

2 cups Bisquick (or other pancake mix)

1 cup milk

2 eggs

STEP#1 Heat the griddle or skillet to 375°, grease with a little butter if necessary.

STEP#2 Stir all ingredients until blended. Pour batter by a little less than 1/4 cupfuls onto hot griddle.

STEP#3 Cook until edges are dry. Turn; cook until golden brown.

(For thinner pancakes use 1 1/2 cups of milk)

Blueberries                            Chocolate Chips        Brown Sugar          White Sugar

Banana Slices                       Nutella                          Whipped Cream     Butter

Fresh Peach Slices              Maple Syrup                Bacon Bits          Crisp Cereal

 

 How to Cook Scrambled Eggs

4 eggs, at room temperature

1/4 cup whole milk

1 Tablespoon butter

Salt & Pepper to taste

  1. Crack your eggs into your mixing bowl and use your whisk to whisk your eggs until they are thoroughly blended.
  2. Whisk eggs and milk until mixture is a pale yellow and add salt and pepper. Whisk again until your arms hurt, or use an electric beater to get as much air in as possible.
  3. Add butter to your sauté pan and heat on medium to medium-low until it is hot enough to make a drop of water hiss when added.
  4. Add egg mixture and let it cover the inside bottom of the pan.
  5. Add any extras now. *
  6. As the eggs cook, push one side toward the center with your spatula and tilt the pan to make the uncooked mixture fill in the empty part of the pan.
  7. Continue to do this on all sides until there is no liquid left.
  8. Turn off the burner and gently stir the eggs until they are almost done.
  • You might like to add some extras-
    • 1/4 cup grated cheese
    • 2  Tablespoons diced ham
    • 2 Tablespoons cooked and diced mushrooms, bacon, onion, peppers, tomatoes, fresh herbs

Orange Julius….a refreshing cold drink made in minutes-2 servings

6 oz. orange juice concentrate

1 cup milk

¼ cup sugar

2 teaspoons vanilla extract

1 cup ice cubes

Instructions

  1. In a blender, combine orange juice concentrate, sugar,

milk, vanilla, and ice cubes.

  1. Blend and pulse until completely smooth.
  2. Serve immediately
